Ingredients:
2 cups heavy whipping cream
1 cup unsweetened almond milk
1/2 cup powdered erythritol or preferred keto-friendly sweetener
1/3 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon salt
80g sugar free chocolate, finely chopped
4 large egg yolks
Instructions:
- In a saucepan over medium heat, combine the heavy cream, almond milk, powdered sweetener, cocoa powder, vanilla extract, and salt.
- Stir continuously until it starts to simmer.
- Place the chopped unsweetened chocolate in a bowl. Once the cream mixture simmers, pour it over the chocolate and whisk until smooth. Set aside.
- In another bowl, whisk the egg yolks. Slowly pour a cup of the warm chocolate mixture into the egg yolks while whisking constantly. This helps temper the eggs.
- Pour the egg mixture back into the saucepan with the rest of the chocolate mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
- Remove from heat and let it cool to room temperature. Once cooled, cover the mixture and chill it in the refrigerator for at least 4 hours or overnight, ensuring it’s well-chilled.
- Freezing Process:
- After the mixture is thoroughly chilled:
- Pour the chilled mixture into a shallow dish suitable for freezing, like a metal baking pan or a glass dish.
- Place the dish in the freezer and let it sit for 45-60 minutes.
- After the first hour, or when the edges start to freeze, take the mixture out and vigorously whisk it with a hand mixer or a fork to break up the ice crystals and create a smoother texture.
- Repeat this whisking process every 30-45 minutes for the next 2-3 hours, breaking up the ice crystals each time until the mixture is uniformly frozen and creamy.
- Once it reaches a smooth, ice cream-like consistency, transfer it to a freezer-safe container, cover, and freeze for a few more hours until firm.
- This method of manually churning the ice cream every 30-45 minutes helps break up ice crystals and create a creamier texture similar to that achieved by an ice cream maker.
