Because we can’t have potatoes in the Banting or Keto way of life, roasted turnips are a great alternative. With a low carb value of only 5.5g carbs for one medium sized turnip, this vegetable is a great alternative to potatoes.
INGREDIENTS
6 Large turnips peeled
2 Tablespoons of Olive oil (or duck fat – makes them really crispy!)
½ cup finely grated parmesan cheese
1 Tablespoon salted butter Fresh Thyme Salt and Pepper to taste
INSTRUCTIONS
1. Peel the turnips and slice into thick wedges
2. Rinse in cold water and pat dry
3. Toss in the olive oil, melted butter and chopped thyme and parmesan cheese.
4. Spread onto a baking sheet and bake in a 180 degree oven for about 20-30 mins until cooked through
5. You can also do these in the air fryer
6. Serve hot and sprinkle with chopped chives.
