Tuna Fish Cakes

INGREDIENTS

• 1 can tuna in water drained and flaked
• 1/2 small onion finely diced
• 1 garlic clove minced
• ⅓ cup chopped fresh parsley
• 2 tablespoons almond flour
• 1 tablespoon Greek yogurt
• 1 egg
• 1 teaspoons Dijon mustard
• ½ teaspoon salt
• ¼ teaspoon black pepper

INSTRUCTIONS

1. Drain the canned tuna and place it in a bowl.
2. Finely chop the onion and garlic
3. Next, preheat some olive oil in a pan over medium heat. Sauté the garlic and onion until cooked through. Remove and let it cool completely.
4. Once cooled completely, add all the ingredients together in one bowl. Mix until everything is combined. Then shape into small patties (should make about 6-8 patties)
5. Preheat some olive oil over medium to medium-high heat. Pan-fry the patties from both sides until they are browned. Then remove them from the pan and repeat until all patties are cooked.
6. Serve with a simple green salad for lunch, or add roasted vegs for a dinner.
